Ingredients/Components
- salt - 1 tsp
- flour - 1 Tbsp
- buttermilk
- baking powder - 2 tsp
- baking soda - 1 tsp
- egg, beaten - 1 item
- finely chopped onion - 6 Tbsp
- cayenne pepper - 1 tsp
- lard or shortening - 2 c
- white cornmeal - 2 c
How to make hush puppies:
Combine cornmeal, flour, baking powder, baking soda and salt in medium size bowl. Stir in egg, onion and cayenne pepper. Add buttermilk; beat well. Heat lard in heavy frypan until hot, about 375°. Drop rounded teaspoonfuls of batter into hot fat. Fry until golden brown, turning once. Drain on paper towels. Wrap hush puppies in heavy foil; place in warm oven (250°) until ready to serve.
