Ingredients/Components

  • salt - 1 tsp
  • freshly ground pepper - 1 item
  • cloves garlic - 2 item
  • olive oil - 2/3 c
  • can chickpeas, drained and rinsed - 1 oz
  • fresh lemon juice - 6 Tbsp
  • cumin - 1/2 tsp
  • tahini - 1/2 c
  • loosely packed parsley - 1/4 c
  • additional olive oil to garnish - 3 Tbsp
  • paprika and olives to garnish - 1 item

How to make hummus:

Mince parsley in food processor; set aside. Drop garlic through feeding tube while machine is running. Process until well minced. Add chickpeas, 2/3 cup olive oil, tahini, lemon juice, salt, cumin and pepper. Process until smooth. Spoon into serving bowl; drizzle with remaining olive oil and sprinkle with parsley. Garnish with olives.

Serve chilled or at room temperature with pita bread cut in triangle shapes.
