Hummus
Ingredients/Components
- salt - 1 tsp
- freshly ground pepper - 1 item
- cloves garlic - 2 item
- olive oil - 2/3 c
- can chickpeas, drained and rinsed - 1 oz
- fresh lemon juice - 6 Tbsp
- cumin - 1/2 tsp
- tahini - 1/2 c
- loosely packed parsley - 1/4 c
- additional olive oil to garnish - 3 Tbsp
- paprika and olives to garnish - 1 item
How to make hummus:
Mince parsley in food processor; set aside. Drop garlic through feeding tube while machine is running. Process until well minced. Add chickpeas, 2/3 cup olive oil, tahini, lemon juice, salt, cumin and pepper. Process until smooth. Spoon into serving bowl; drizzle with remaining olive oil and sprinkle with parsley. Garnish with olives.Serve chilled or at room temperature with pita bread cut in triangle shapes.
