Ingredients/Components
- all-purpose flour - 3 c
- sugar - 2 c
- baking soda - 1 tsp
- salt - 1 tsp
- cinnamon - 1 tsp
- eggs, beaten - 3 item
- vegetable oil - 1 c
- vanilla extract
- can crushed pineapple undrained - 1 oz
- chopped pecans - 1 c
- chopped bananas - 2 c
- cream cheese frosting - 1 item
- Add eggs and oil, stirring until dry ingredients are moistened
- butter - 1/2 c
- pkg - 1 oz
How to make hummingbird cake:
Combine first 5 ingredients in large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Spoon batter into 3 greased and floured 9-inch round pans. Bake at 350° for 20 to 25 minutes or until wooden pick comes out clean. Cool in pans for 10 minutes. Remove from pans and cool completely.Frosting:1 (8 oz.) pkg. cream cheese1/2 c. butter1 (16 oz.) pkg. powdered sugar1 tsp. vanilla extract Mix all ingredients thoroughly.
