Hummingbird cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- salt - 1 tsp
- chopped nuts - 1/2 c
- soda - 1 tsp
- all-purpose flour - 3 c
- large eggs - 3 item
- mashed bananas - 2 c
- Crisco oil
- box powdered sugar - 1 lb
- can crushed pineapple undrained - 1 oz
- stick margarine, softened - 1 item
- Pour batter into a greased and floured Bundt or tube pan
How to make hummingbird cake:
Mix all ingredients together in large mixing bowl with a spoon. Pour batter into a greased and floured Bundt or tube pan. Bake at 325° for 1 1/2 hours. Cool in pan 1 hour before removing from pan. Allow to cool completely and ice, if desired, with Cream Cheese Icing.Note: This cake can also be baked in three 9-inch layers, if desired. Bake for 30 minutes. This cake can also be frozen.Cream Cheese Icing:1 (8 oz.) pkg. cream cheese1 stick margarine, softened1 (1 lb.) box powdered sugar1 tsp. vanilla Cream margarine and cream cheese. Add sugar and vanilla. Beat until creamy and smooth; ice cake.
