Hummingbird cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- vanilla extract
- salt - 1 tsp
- eggs, beaten - 3 item
- baking soda - 1 tsp
- all-purpose flour - 3 c
- powdered sugar - 2 lb
- salad oil - 3/4 c
- chopped bananas - 2 c
- crushed pineapple undrained - 8 oz
- chopped pecans plus enough to sprinkle on top - 1 c
- Add eggs and salad oil
- butter or margarine not whipped kind - 1 c
How to make hummingbird cake:
Mix dry ingredients in a large bowl. Add eggs and salad oil. Just stir. Stir in vanilla, pineapple and bananas. Divide into 3 well-greased and floured pans. Bake at 300° for 30 minutes. Cool 10 minutes.Frosting:2 (8 oz.) pkg. cream cheese1 c. butter or margarine (not whipped kind)2 lb. powdered sugar1 1/2 tsp. vanilla Cream cheese and butter.
