  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • flour - 3 c
  • coconut - 1/2 c
  • oil
  • soda - 1 tsp
  • can crushed pineapple - 1 oz
  • pecans - 1 c
  • butter or oleo - 1 c
  • bananas, diced - 2 item
  • boxes powdered sugar - 2 oz
  • Do not use mixer, then add dry ingredients

How to make hummingbird cake:

Thoroughly mix sugar, eggs and vanilla. Do not use mixer, then add dry ingredients. Mix well, add fruit and nuts. Bake in greased and floured tube pan at 325° for 1 1/2 hours. Cool completely before removing from pan. This is a must. May also be baked in 3 or 4 layers at 350° for 25 to 30 minutes.Icing:2 (8 oz.) pkg. cream cheese1 c. butter or oleo2 (16 oz.) boxes powdered sugar2 tsp. vanilla Mix and add milk as needed for spreading.
