Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- flour - 3 c
- coconut - 1/2 c
- oil
- soda - 1 tsp
- can crushed pineapple - 1 oz
- pecans - 1 c
- butter or oleo - 1 c
- bananas, diced - 2 item
- boxes powdered sugar - 2 oz
- Do not use mixer, then add dry ingredients
How to make hummingbird cake:
Thoroughly mix sugar, eggs and vanilla. Do not use mixer, then add dry ingredients. Mix well, add fruit and nuts. Bake in greased and floured tube pan at 325° for 1 1/2 hours. Cool completely before removing from pan. This is a must. May also be baked in 3 or 4 layers at 350° for 25 to 30 minutes.Icing:2 (8 oz.) pkg. cream cheese1 c. butter or oleo2 (16 oz.) boxes powdered sugar2 tsp. vanilla Mix and add milk as needed for spreading.Recipe categories: Desserts, Cakes, < 60 mins.
