Hummingbird cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- salt - 1 tsp
- flour - 3 c
- soda - 1 tsp
- eggs, beaten - 3 item
- salad oil
- softened butter or margarine - 1/2 c
- chopped pecans or walnuts - 2 c
- box powdered sugar - 1 lb
- cans crushed pineapple - 2 oz
- chopped banana - 2 c
- Cream Cheese Frosting - 1 item
- Add beaten eggs and oil; stir until moistened using spoon
How to make hummingbird cake:
Combine dry ingredients in a large bowl. Add beaten eggs and oil; stir until moistened using spoon. Do not beat. Stir in vanilla, undrained pineapple, 1 cup of pecans or walnuts, and all the bananas. Spoon into 3 greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool in pans 15 minutes, remove and cool completely. Spread frosting (recipe follows) between layers and on top, sprinkling each layer with remaining nuts.Cream Cheese Frosting:1 (8 oz.) pkg. softened cream cheese1/2 c. softened butter or margarine1 (1 lb.) box powdered sugar1 tsp. vanilla Beat all ingredients together until light and fluffy.Recipe categories: Desserts, Cakes, < 60 mins.
