  • sugar - 2 c
  • pkg - 1 oz
  • vanilla extract
  • salt - 1/2 tsp
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • vegetable oil - 3/4 c
  • all-purpose flour - 3 c
  • mashed bananas
  • ground cinnamon - 1 tsp
  • pecans, chopped - 1 c
  • can crushed pineapple undrained - 1 oz
  • Cream Cheese Frosting - 1 item
  • Do not beat

How to make hummingbird cake:

Combine the first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 30 minutes. Cool in pans 10 minutes. Remove from pans and let cool completely on wire racks.

Stir 1/2 cup pecans into Cream Cheese Frosting, if desired, or reserve them to sprinkle over top of frosted cake. Spread frosting between layers and on top and sides of cake.Cream Cheese Frosting:1/2 c. margarine, softened1 (8 oz.) pkg. cream cheese, softened1 (16 oz.) pkg. powdered sugar, sifted1 tsp. vanilla extract For starter, use a large gallon size glass jar with glass top. Into this jar, combine 1 1/2 cups "starter juice," 2 1/2 cups of sugar and 1 large can chopped peaches. Let stand 10 days outside refrigerator and stir each day. On the eleventh day, add 2 1/2 cups of sugar and 1 large can crushed pineapple. Let stand outside refrigerator another 10 days and stir well each day. On twenty-first day, add 3 1/2 cups of sugar, 1 large can fruit cocktail and 10 ounce jar maraschino cherries. Let stand another 10 days. Stir well each day. On thirtieth day, drain "fermented fruit" and save juice for "starter" and to give to your friends.
