Ingredients/Components

  • cinnamon - 1 tsp
  • vanilla - 2 tsp
  • chopped pecans - 1 c
  • granulated sugar - 2 c
  • salt - 1 tsp
  • flour - 3 c
  • oil
  • baking soda - 1 tsp
  • powdered sugar - 28 oz
  • pecans - 3/4 c
  • eggs, well beaten - 3 item
  • black walnuts - 1/4 c
  • crushed pineapple, undrained - 8 oz
  • chopped banana - 2 c
  • Add eggs and oil, stirring until moist
  • butter, not margarine, room temperature - 1 c

How to make hummingbird cake:

Combine all dry ingredients in large bowl. Add eggs and oil, stirring until moist. Do not use mixer. Stir in vanilla, pineapple and nuts. Finally, add bananas. Spoon batter into 3 well greased and floured 9 inch round cake pans. Bake in preheated 35
