Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla
- chopped pecans - 2 c
- salt - 1 tsp
- flour - 3 c
- oil
- soda - 1 tsp
- eggs, beaten - 3 item
- oleo, softened - 1 c
- can crushed pineapple with juice - 1 oz
- box powdered sugar - 1 oz
- Add eggs and oil, stirring until dry ingredients are moistened
- chopped bananas - 2 c
How to make hummingbird cake:
Combine dry ingredients in large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and 2 cups bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Remove from pans and frost with cream cheese frosting.Frosting:1 (8 oz.) pkg. cream cheese1 c. oleo, softened1 (16 oz.) box powdered sugar2 tsp. vanilla Cream first 2 ingredients until smooth.
