Ingredients/Components

  • flour - 3 c
  • salt - 1 tsp
  • baking soda - 1 tsp
  • cinnamon - 2 tsp
  • sugar - 2 c
  • eggs - 3 item
  • Crisco oil
  • vanilla - 1 Tbsp
  • can crushed pineapple with juice - 1 oz
  • pecans, chopped - 1 c
  • bananas, chopped - 2 c
  • Mix with a spoon
  • stick butter not whipped - 1 item
  • box powdered sugar - 1 item
  • pecans, finely chopped - 1 c

How to make hummingbird cake:

Combine first 5 ingredients. Mix with a spoon. In a separate bowl, mix with a mixer the next 3 ingredients (eggs, oil and vanilla) then add to dry ingredients and mix with a spoon. Add other ingredients one at a time, mixing with a spoon. Batter will be thick. Bake at 350° for 45-50 minutes or until toothpick comes out clean. Bake in a greased and floured 9x13 pan. Don't let it set over 15 minutes in pan after taking it out of the oven.Frosting:1 (8 oz.). Philadelphia cream cheese1 stick butter (not whipped)1 box powdered sugar1 tsp. vanilla1 c. pecans, finely chopped Let cheese and butter soften, then cream together. Add powdered sugar and vanilla and mix with mixer. Be sure cake is completely cool before frosting. Then sprinkle nuts on top.
