Ingredients/Components

  • salt - 1 tsp
  • water - 1/2 c
  • chili powder - 4 tsp
  • chicken broth - 4 5
  • ground beef - 2 lb
  • cloves garlic - 7 item
  • tomato sauce - 8 oz
  • ground cumin - 2 tsp
  • black pepper - 1 tsp
  • onion - 1 item
  • red pepper - 1 tsp
  • corn meal - 1/2 c
  • meal - 2 c
  • red pepper very hot, add 2 tsp - 1 tsp

How to make hot tamales:

Mix the first 9 ingredients in a food processor. Pour over ground beef and corn meal. Mix well and shape into the size of link sausage. Roll in meal mixture made with meal, salt, pepper and cumin. Put on coffee filter. Sprinkle about 1 1/2 teaspoons meal mixture over tamale. Roll tightly in filters. Pack tightly in a large pot with a rack in the bottom. Place tamales open side down. Weigh down with a plate. Pour into pot the remaining ingredients. Simmer 1 hour. Remove from broth; drain well. Allow time for tamales to firm up before serving.
