  • salt - 2 Tbsp
  • cold water - 2 c
  • oil - 3 4
  • paprika - 1 Tbsp
  • chili powder
  • salt and pepper - 1 item
  • cloves garlic - 4 item
  • red pepper - 2 tsp
  • cumin - 1 Tbsp
  • beef bouillon cubes - 2 item
  • corn meal
  • large onions - 4 item
  • lean ground meat - 5 lb
  • large bell peppers - 2 item
  • pieces celery - 3 item
  • Mash frequently to keep meat in small pieces

How to make hot tamales:

Chop the first five ingredients and fry. Mash frequently to keep meat in small pieces. Season with cumin and chili powder. Cook more, then season to taste with salt and pepper.Mush (to make 7 dozen)*:4 1/2 c. water2 beef bouillon cubes2 1/2 c. corn meal2 Tbsp. salt2 tsp. red pepper1 Tbsp. paprika1 tsp. cumin2 Tbsp. chili powder2 c. cold water3 to 4 Tbsp. oil *It is necessary that this amount be mixed and used, then repeat, because it becomes stiff and hard to work with upon standing.

Heat 4 1/2 cups water and beef bouillon cubes. While this is heating, mix together corn meal, salt, red pepper, paprika, cumin and chili powder. Add 2 cups cold water to dry ingredients. Then add this concentrated mush to hot water in pot. Cook until thick. Important, add oil to mush (from meat if available).

Cook tamales 20 minutes, covered, in a pot with frame on bottom. Uncover and cool for 10 or 15 minutes, then serve.
