  • garlic powder - 2 Tbsp
  • cayenne pepper 1/2 amount for milder - 1 Tbsp
  • black pepper - 1 tsp
  • salt - 3 Tbsp
  • corn meal - 1/2 c
  • chili powder - 1 oz
  • tamale papers - 1 item
  • cumin - 3 tsp
  • tomato sauce - 1 (8
  • medium onions - 3 item
  • can tomato paste
  • extra corn meal for rolling - 1 item

How to make hot tamales:

Sauce:1 (6 oz.) can tomato paste1 oz. chili powder extra corn meal for rolling Puree onions, tomato sauce and 1/2 cup water in blender. Put all ingredients in pan. Mix well by hand. Take 1 teaspoon at a time and roll in oblong ball. Spread corn meal in plate. Roll meat in corn meal; wrap in paper (soak papers in bowl of water to wet them for easy rolling). Put all tamales in pan. Layer first layer in one direction, second layer in opposite direction, etc. Put 1 small can tomato paste and 1 ounce chili powder in pot of boiling water (about 3 quarts) to dissolve. Then pour over hot tamales to completely cover. Simmer 1 1/2 to 2 hours with cover on. Place something heavy on tamales to keep them submerged. Add water if needed.
