Hot chicken salad
Ingredients/Components
- salt - 1 tsp
- lemon juice - 2 Tbsp
- mayonnaise
- celery, diced - 2 c
- cooked chicken, cubed - 4 c
- hard-boiled eggs - 4 item
- Cheddar cheese, grated - 1 c
- pimentos, cut fine - 2 item
- potato chips, crumbled
- onion juice may omit - 1 Tbsp
How to make hot chicken salad:
Combine mayonnaise, salt, lemon juice, onion juice and pimentos. Add chicken, celery and hard-boiled eggs; stir gently to coat. Pour into lightly greased 13 x 9-inch pan. Top with grated Cheddar cheese and then top with crumbled potato chips. Bake at 350° for 35 to 40 minutes. Yield: 8 servings. Excellent when served with spiced peaches and soft rolls. Spice peaches with sprinkles of one or more of your favorite spices, cinnamon, nutmeg, ginger, cloves, etc.Recipe categories: Chicken, Main dish, One Dish meal.
