Ingredients/Components

  • sour cream - 1/4 c
  • chopped onion - 1/2 c
  • mustard - 2 tsp
  • shredded Cheddar cheese - 1/2 c
  • mayonnaise - 1/3 c
  • diced celery
  • crushed potato chips - 1 c
  • cooked cubed chicken - 2 c
  • sliced or slivered almonds, toasted if desired could probably substitute toasted pecan halves - 1/4 c
  • small jar or equivalent chopped pimento - 1 item
  • can sliced water chestnuts optional* - 1 item
  • sliced ripe olives optional* - 1/2 c
  • small jar drained mushrooms optional* - 1 item

How to make hot chicken salad:

*Use all, any or none of the three. Personally, the water chestnuts are a must.

Microwave celery and onion until tender (3 to 4 minutes). Mix with chicken, nuts, pimento, olives, mushrooms and water chestnuts, if desired. Combine mayonnaise, mustard and sour cream and stir into chicken. (I usually add a handful of broken potato chips.) If seems too dry, add extra of the sauce ingredients. Place in lightly greased baking dish. Combine crushed potato chips and shredded cheese and sprinkle evenly over top. Bake at 350° until thoroughly heated through.
