Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/4 tsp
  • flour
  • butter - 1 c
  • baking soda - 1 tsp
  • whipping cream - 1 c
  • pecan halves - 1/2 c
  • ground cinnamon
  • ground nutmeg - 1/4 tsp
  • firmly packed light brown sugar - 1 c
  • pecans, broken - 3/4 c
  • tart apples, peeled, cored and finely chopped - 3 item
  • Grease cake pan and set aside

How to make hot apple cake with caramel pecan sauce:

Preheat oven to 350°. Grease cake pan and set aside.

Beat butter and sugar in a large bowl with electric mixer on high, until light and fluffy, about 2 minutes. Beat in eggs on low, one at a time, until well blended. Add flour, spices, baking soda and salt, beating just until blended. Mix in apples, nuts and vanilla.

Spoon batter into cake pan. Bake 35 to 45 minutes. Remove to rack and cool. Turn cake out of pan after 10 minutes. Serve warm with Caramel Pecan Sauce.Caramel Pecan Sauce:4 Tbsp. unsalted butter1/2 c. pecan halves1 c. firmly packed light brown sugar1 c. whipping cream Melt butter in a medium saucepan. Add nuts. Cook, stirring constantly, over moderately high heat until nuts are toasted and butter is lightly browned. Add brown sugar and cream; continue to cook, stirring constantly, until sauce boils and sugar dissolves, turning a deep golden brown. Remove from heat. Sauce will thicken slightly as it cools. This sauce may be refrigerated for days. Reheat before serving.

To serve, place a wedge of warm cake on a plate, spoon one scoop of vanilla ice cream on top and a spoon of hot Caramel Pecan Sauce over all.
