  • sugar
  • salt - 1 tsp
  • oil - 1/4 c
  • molasses - 1 Tbsp
  • warm water - 3 c
  • honey - 3/4 c
  • whole wheat flour - 5 c
  • yeast - 2 Tbsp
  • white flour - 3 c

How to make honey wheat bread:

Dissolve yeast in 1/2 cup warm water (110°) and sugar. Set aside 10 minutes or until yeast becomes spongy. (If this does not occur, start over with new yeast or bread will not rise.)

In another bowl, combine remaining water, honey and molasses. Stir until dissolved. Add yeast, oil and salt. Add wheat flour. Beat with wooden spoon 100 strokes. Add remaining flour.

Turn dough out onto floured surface. Knead. Place dough in oiled bowl, turn once. Cover bowl with warm slightly damp cloth. Set in warm place. Let dough rise until double. Punch down. Let rise again and then punch down. Shape into 2 loaves.

Roll each loaf into a rectangle and up from narrow end. Place loaf, seam side down into greased loaf pan. Let rise 20 to 30 minutes.

Bake at 350° for 50 to 60 minutes or until brown and bread pulls away from side of pan. Remove from pan immediately. Set on racks to cool.
