Ingredients/Components

  • cinnamon - 1 tsp
  • chopped pecans - 1/4 c
  • butter
  • nutmeg - 1 tsp
  • soda - 1 tsp
  • flaked coconut - 3/4 c
  • boiling water - 1 c
  • shortening - 1/4 c
  • all-purpose flour
  • honey - 1 c
  • quick cooking oats - 1 c
  • fig preserves optional - 1 pt

How to make honey cake:

Frosting:1/4 c. butter1/2 c. honey3/4 c. flaked coconut1/4 c. chopped pecans Cake: Preheat oven to 325°. Grease 13 x 9-inch pan. Put oats in small bowl; add water. Cover and let stand 20 minutes. Sift flour, soda, salt and spices; set aside in large bowl. Cream sugar and shortening; gradually beat in honey. Stir in eggs and oats. Add dry ingredients; blend well. Turn into pan and bake until well done, 40 to 65 minutes. Do not remove from pan. Spread Honey Pecan Frosting on top.

Frosting: Cream butter until fluffy; beat in honey. Stir in coconut and chopped pecans.
