Ingredients/Components
- milk - 1 c
- salt - 1 tsp
- flour - 2 c
- baking powder - 3 tsp
- melted butter - 1/4 c
- honey - 4 Tbsp
- egg, beaten - 1 item
- blueberries - 1/2 c
- Combine milk, honey, egg, blueberries and shortening; add to dry ingredients
How to make honey blueberry muffins:
Stir flour with salt and baking powder. Combine milk, honey, egg, blueberries and shortening; add to dry ingredients. Stir quickly, just long enough to moisten dry ingredients. Fill greased muffin tins half full. Bake in a 400° oven for 35 minutes, or until browned. Yields 12 muffins.For Flavor Variations: Orange Muffins: Omit blueberries and milk. Add 1 cup orange juice, grated rind of 1 orange and 1/4 cup chopped nuts to muffin dough.Currant Muffins: Omit blueberries and add 1/2 cup currants.
