  • lean stewing beef - 1 lb
  • small beef soup bones - 4 item
  • salt - 1 tsp
  • black pepper - 1/4 tsp
  • cabbage, chopped - 1/2 c
  • fresh carrots, diced - 1/2 c
  • fresh or frozen string beans - 1/2 c
  • celery, chopped - 1/2 c
  • medium onions, sliced - 2 item
  • potatoes, diced - 1/2 c
  • fresh or frozen peas - 1/2 c
  • can tomatoes - 1 lb
  • can cream-style corn - 1 oz
  • pot herbs - 1/2 tsp
  • whole thyme - 1/4 tsp
  • bunch parsley - 1/2 item
  • small, hot red pepper - 1 item

How to make homemade vegetable beef soup:

Place meat, washed bones and 1 1/2 quarts of water in kettle. Simmer 1 hour and 30 minutes. Remove bones. Add salt, pepper, cabbage, carrots, string beans, celery and onions; simmer 1 hour and 30 minutes. Add potatoes, peas, tomatoes, corn, pot herbs and thyme. Add parsley and pepper. (Tie parsley and pepper together, if desired, and discard later.) Simmer 1 hour more. Yields 8 servings.
