Homemade vegetable beef soup
Ingredients/Components
- lean stewing beef - 1 lb
- small beef soup bones - 4 item
- salt - 1 tsp
- black pepper - 1/4 tsp
- cabbage, chopped - 1/2 c
- fresh carrots, diced - 1/2 c
- fresh or frozen string beans - 1/2 c
- celery, chopped - 1/2 c
- medium onions, sliced - 2 item
- potatoes, diced - 1/2 c
- fresh or frozen peas - 1/2 c
- can tomatoes - 1 lb
- can cream-style corn - 1 oz
- pot herbs - 1/2 tsp
- whole thyme - 1/4 tsp
- bunch parsley - 1/2 item
- small, hot red pepper - 1 item
How to make homemade vegetable beef soup:
Place meat, washed bones and 1 1/2 quarts of water in kettle. Simmer 1 hour and 30 minutes. Remove bones. Add salt, pepper, cabbage, carrots, string beans, celery and onions; simmer 1 hour and 30 minutes. Add potatoes, peas, tomatoes, corn, pot herbs and thyme. Add parsley and pepper. (Tie parsley and pepper together, if desired, and discard later.) Simmer 1 hour more. Yields 8 servings.Recipe categories: Vegetables, Soups & stews, Beef.
