  • water - 3/4 c
  • garlic powder
  • sage - 1 tsp
  • hamburger - 5 lb
  • seasoned salt - 1 Tbsp
  • cracked pepper
  • onion powder
  • liquid smoke - 1 tsp
  • mustard seed
  • Morton Tender Quick salt
  • hickory smoked salt - 1 tsp

How to make homemade salami:

Break up hamburger. Mix next 8 ingredients in bowl and pour over meat. Add water and smoke. Mix well. Refrigerate 24 hours.

Mix well again. Do this for 3 days. On fourth day, make into 2 1/2-inch diameter rolls. Pack tightly. Wrap in plastic wrap and refrigerate several hours. Unwrap and bake 8 hours at 175°, turning once after 4 hours on rack. Remove and wrap in paper towels until cool, then wrap in foil. Freeze until needed.
