Ingredients/Components

  • sugar
  • vanilla
  • milk - 2 c
  • salt
  • cornstarch
  • eggs, beaten - 2 item
  • whipping cream
  • brown sugar, packed
  • butter, melted
  • pecans, chopped
  • maple-flavored pancake syrup

How to make homemade butter pecan ice cream:

On a baking sheet, combine butter, pecans, salt and 1 tablespoon sugar and spread into a single layer. Roast at 350° for 15 minutes. Stir and roast 15 minutes longer; cool.

To make the ice cream, combine brown sugar, 1/4 cup sugar, cornstarch, eggs and syrup in top of double boiler. Gradually add milk. Cook over boiling water until mixture thickens. Remove from heat and chill two hours or overnight.

Stir in toasted pecans, cream and vanilla. Place in ice cream freezer and add 2 quarts milk. Freeze according to manufacturer's directions. Allow to ripen in ice cream freezer or firm up in refrigerator freezer an hour before serving. Yield: one gallon.
