  • salt - 1/8 tsp
  • egg yolks - 3 item
  • warm water - 1 Tbsp
  • lemon juice - 2 Tbsp
  • butter, melted - 1/2 lb
  • dash of cayenne pepper - 1 item

How to make hollandaise sauce:

In top of double boiler, place warm water and egg yolks; beat until creamy (3 minutes). Remove from heat. Add lemon, salt and pepper. Beat in butter a little at a time until smooth.
