  • cinnamon - 1/2 tsp
  • milk - 1/2 c
  • salt - 1/2 tsp
  • brown sugar - 1/2 Tbsp
  • butter - 2 Tbsp
  • nutmeg - 1/2 tsp
  • miniature marshmallows - 1 pkg
  • egg whites, stiffly beaten - 2 item
  • large sweet potatoes - 3 item
  • pecans or walnuts - 1/2 c

How to make holiday sweet potatoes:

Bake sweet potatoes at 400° until soft, about 1 hour. Let potatoes cool, remove skins and mash with butter. Add milk, salt, cinnamon, nutmeg and brown sugar. Mix thoroughly. Fold in beaten egg whites, fold in nuts. Bake at 400° for 10 minutes in a greased casserole dish or pan. Top with marshmallows and broil until marshmallows brown.
