  • pkg - 1 8oz
  • milk - 1/2 c
  • salt - 1 tsp
  • butter or oleo - 1/4 c
  • dash of pepper - 1 item
  • finely chopped onions - 1/4 c
  • eggs, slightly beaten - 2 item
  • commercial sour cream - 1/2 c
  • about 12 medium, potatoes, peeled and cooked hot - 3 lb

How to make holiday mashed potatoes:

In a large mixing bowl, mash hot potatoes by hand. When no lumps are left, add cream cheese in small pieces, then add butter. Beat well until cheese and butter are melted and completely mixed. Mix in sour cream. To milk, add eggs and onions. Fold into potato mixture along with salt and pepper. Beat well until light and fluffy. Place in a 9-inch round casserole and refrigerate for a few hours or overnight. Bake in a preheated oven at 350° for 40 to 45 minutes. Makes 8 to 12 servings.
