Ingredients/Components

  • salt and pepper to taste - 1 item
  • olive oil - 3 Tbsp
  • fresh parsley - 1/4 c
  • fresh basil - 1/4 c
  • onion, sliced - 2/3 c
  • large clove garlic, minced - 1 item
  • fresh or frozen green beans
  • tomatoes, chopped and seeded - 2 c
  • freshly shredded Parmesan cheese - 1/2 c

How to make herbed green beans:

Blanch beans in boiling, salted water for 2 to 3 minutes until not quite tender. Drain, refresh in cold water and dry. Saut?© garlic and onion in oil until tender, but not browned. Add tomatoes, beans and salt and pepper. Simmer 2 to 3 minutes until beans are tender-crisp. Add fresh herbs and cheese just before serving. Garnish with additional parsley. Yield: 8 to 10 servings.
