Herbed green beans



Ingredients/Components
- salt and pepper to taste - 1 item
- olive oil - 3 Tbsp
- fresh parsley - 1/4 c
- fresh basil - 1/4 c
- onion, sliced - 2/3 c
- large clove garlic, minced - 1 item
- fresh or frozen green beans
- tomatoes, chopped and seeded - 2 c
- freshly shredded Parmesan cheese - 1/2 c
How to make herbed green beans:
Blanch beans in boiling, salted water for 2 to 3 minutes until not quite tender. Drain, refresh in cold water and dry. Saut?© garlic and onion in oil until tender, but not browned. Add tomatoes, beans and salt and pepper. Simmer 2 to 3 minutes until beans are tender-crisp. Add fresh herbs and cheese just before serving. Garnish with additional parsley.
