  • salt and pepper to taste - 1 item
  • olive oil - 3 Tbsp
  • fresh parsley - 1/4 c
  • fresh basil - 1/4 c
  • onion, sliced - 2/3 c
  • large clove garlic, minced - 1 item
  • fresh or frozen green beans
  • tomatoes, chopped and seeded - 2 c
  • freshly shredded Parmesan cheese - 1/2 c

How to make herbed green beans:

Blanch beans in boiling, salted water for 2 to 3 minutes until not quite tender. Drain, refresh in cold water and dry. Saut? garlic and onion in oil until tender, but not browned. Add tomatoes, beans and salt and pepper. Simmer 2 to 3 minutes until beans are tender-crisp. Add fresh herbs and cheese just before serving. Garnish with additional parsley. Yield: 8 to 10 servings.
