Ingredients/Components
- sage - 3/4 tsp
- plus 1 tsp - 1 Tbsp
- kosher salt - 1/2 tsp
- each: allspice, black pepper and dried rosemary, crumbled - 1/2 tsp
- each, split and skinned - 2 Cornish
How to make herbed cornish hens:
In a small bowl, combine salt, sage, allspice, pepper and rosemary. Coat the hens with oil, then with the herb mixture, rubbing them well. Cover the hens with plastic wrap and refrigerate 3 hours. Preheat broiler. Set rack 8 inches from heat. Arrange hens on broiler pan and broil 8 minutes; turn over and broil 7 to 8 minutes longer. Serves 2.Recipe categories: Poultry, Meat, Roast.
