  • dairy sour cream - 1 pt
  • beaten eggs - 2 item
  • low-fat cottage cheese - 1 pt
  • salt and pepper to taste - 1 item
  • chopped scallions - 1/4 c
  • stick butter, softened - 1/2 item
  • baking potatoes, peeled - 3 lb

How to make heavenly potatoes:

Cook potatoes for 20 minutes, until tender. Drain and mash. Butter a 2-quart casserole and set aside. In a large bowl, beat cheese and eggs with electric mixer at high speed until almost smooth. Add sour cream, scallions, butter, salt and pepper. Beat at low speed until combined. Stir in the mashed potatoes and put mixture in prepared casserole. Bake in a preheated 325° oven for 50 to 60 minutes, until lightly browned.
