Heavenly pie
Ingredients/Components
- granulated sugar - 1/2 c
- salt - 1/8 tsp
- egg yolks - 4 item
- heavy cream - 2 c
- egg whites - 4 item
- cream of tartar - 1/4 tsp
- lemon juice - 3 Tbsp
- grated lemon rind - 1 Tbsp
How to make heavenly pie:
Sift sugar and cream of tartar. Beat egg whites until stiff, not dry. Add sugar mixture slowly, until stiff, glossy peaks. Spread over bottom and sides of a well-greased 9-inch pie plate, bottom 1/4-inch thick, sides 1-inch thick. Bake for 1 hour at 275°, or until brown. Cool away from drafts (will crack). Open oven door and let cool in oven about 1 hour.In double boiler top, beat egg yolks slightly. Stir in sugar, lemon rind, lemon juice and salt. Cook over boiling water until very thick; cool. Whip 1 cup cream; fold into lemon mixture. Fill pie. Refrigerate 12 to 24 hours. Top with 1 cup whipped cream.
