  • water
  • ketchup - 1 c
  • onion, chopped - 1 item
  • parsley, chopped - 2 Tbsp
  • green pepper, diced - 1 item
  • carrots, sliced - 6 item
  • thyme - 1/2 tsp
  • spinach, chopped - 1 c
  • onions, sliced - 2 item
  • corn
  • split peas - 1/2 c
  • medium tomatoes, cubed - 3 item
  • stew beef, cubed - 2 lb
  • green lima beans - 1 c
  • green beans, chopped - 1 c
  • large potato, cubes - 1 item

How to make hearty vegetable beef soup:

In large kettle cover beef with water and add chopped onion, salt and thyme. Bring to boil. Skim fat from surface. Add split peas, cover and simmer over low heat, 3 to 4 hours. Add all remaining ingredients. Cover and simmer 30 minutes. Adjust seasoning. Serves 8.
