Hearty vegetable beef soup
Ingredients/Components
- salt - 1 Tbsp
- water
- ketchup - 1 c
- onion, chopped - 1 item
- parsley, chopped - 2 Tbsp
- green pepper, diced - 1 item
- carrots, sliced - 6 item
- thyme - 1/2 tsp
- spinach, chopped - 1 c
- onions, sliced - 2 item
- corn
- split peas - 1/2 c
- medium tomatoes, cubed - 3 item
- stew beef, cubed - 2 lb
- green lima beans - 1 c
- green beans, chopped - 1 c
- large potato, cubes - 1 item
How to make hearty vegetable beef soup:
In large kettle cover beef with water and add chopped onion, salt and thyme. Bring to boil. Skim fat from surface. Add split peas, cover and simmer over low heat, 3 to 4 hours. Add all remaining ingredients. Cover and simmer 30 minutes. Adjust seasoning. Serves 8.Recipe categories: For large groups, Soups & stews, 3 steps or less.
