Hearty potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- butter - 6 Tbsp
- water - 2 qt
- all-purpose flour - 6 Tbsp
- pepper - 1/2 tsp
- onion, chopped - 1 item
- carrots, diced - 2 item
- stalks celery, diced - 6 item
- medium potatoes, peeled and chunked - 6 item
How to make hearty potato soup:
In a large saucepan, cook potatoes, carrots and celery in water until tender, 20 minutes. Drain, reserving liquid, and set veggies aside.In same pan, saute onion in butter until soft. Stir in flour, salt and pepper. Gradually add milk, stirring constantly, until thickened. Gently stir in cooked veggies. Add 1 cup or more of reserved liquid until soup is desired consistency. Makes 8 to 10 servings (2 1/2 quarts).
