Hearty navy bean soup
Ingredients/Components
- water
- chicken broth - 2 c
- salt and pepper to taste - 1 item
- can tomatoes - 1 oz
- large chopped onion - 1 item
- cooked, diced ham - 1 ham
- or 1 1/2 lb - 3 c
How to make hearty navy bean soup:
Rinse and sort beans. Cover with cold water and soak overnight. Drain beans and place in large soup kettle. Add tomatoes with juice, onion, ham hock, broth, water, salt and pepper. Bring to boil. Reduce heat. Cover and simmer until beans are tender, about 1 1/2 hours. Add more water, if necessary.Remove ham hock. Cut meat off and add to soup; heat through. Garnish with parsley. Yields 10 servings with 265 calories and 3 g fat. If cooking for two, freeze serving size portions for later.
