Hearty beef vegetable soup
Ingredients/Components
- pepper to taste - 1 item
- salt to taste - 1 item
- basil leaves - 2 Tbsp
- broccoli flowerets - 2 c
- medium onions - 2 item
- beef bouillon cubes - 4 item
- carrots, thinly sliced - 2 c
- beef bones - 2 3
- brown and wild rice - 2 c
- to 12 cups water - 10 item
How to make hearty beef vegetable soup:
In large stock pot, combine beef bones, water and any stems and/or leaves from vegetables. Bring to boil. Reduce heat and simmer for 2 hours. Remove meat from bones. Strain broth and refrigerate for 2 to 3 hours. Skim fat from broth. Return to heat. Add bouillon cubes, rice and seasonings. Simmer until rice is tender. Add vegetables and continue simmering until done. Makes approximately 4 quarts. Freezes well. A great project for a "cabin fever afternoon."Recipe categories: Vegetables, Soups & stews, Beef.
