Hearty beef vegetable soup



  • pepper to taste - 1 item
  • salt to taste - 1 item
  • basil leaves - 2 Tbsp
  • broccoli flowerets - 2 c
  • medium onions - 2 item
  • beef bouillon cubes - 4 item
  • carrots, thinly sliced - 2 c
  • beef bones - 2 3
  • brown and wild rice - 2 c
  • to 12 cups water - 10 item

How to make hearty beef vegetable soup:

In large stock pot, combine beef bones, water and any stems and/or leaves from vegetables. Bring to boil. Reduce heat and simmer for 2 hours. Remove meat from bones. Strain broth and refrigerate for 2 to 3 hours. Skim fat from broth. Return to heat. Add bouillon cubes, rice and seasonings. Simmer until rice is tender. Add vegetables and continue simmering until done. Makes approximately 4 quarts. Freezes well. A great project for a "cabin fever afternoon."
