Ingredients/Components
- dried oregano, crushed - 1/4 tsp
- torn fresh spinach - 6 c
- oil and vinegar salad dressing - 1/2 c
- small carrot, shredded - 1 item
- can hearts of palm, drained, sliced and chilled - 1 oz
- fresh summer savory sprigs optional - 1 item
- fresh oregano sprigs optional - 1 item
How to make hearts of palm salad:
Toss together spinach and carrot. Cover; chill. In a screwtop jar, place salad dressing and oregano. Cover and shake to combine. Chill. Before serving, mound spinach onto 6 salad plates. Top with hearts of palm. Drizzle dressing mixture over. Garnish with savory and oregano, if desired. Serve immediately. Yield: 6 servings.Recipe categories: Lunch/snacks, Salads, Side dish.
