Ingredients/Components

  • dried oregano, crushed - 1/4 tsp
  • torn fresh spinach - 6 c
  • oil and vinegar salad dressing - 1/2 c
  • small carrot, shredded - 1 item
  • can hearts of palm, drained, sliced and chilled - 1 oz
  • fresh summer savory sprigs optional - 1 item
  • fresh oregano sprigs optional - 1 item

How to make hearts of palm salad:

Toss together spinach and carrot. Cover; chill. In a screwtop jar, place salad dressing and oregano. Cover and shake to combine. Chill. Before serving, mound spinach onto 6 salad plates. Top with hearts of palm. Drizzle dressing mixture over. Garnish with savory and oregano, if desired. Serve immediately. Yield: 6 servings.
