Hawaiian sweet potatoes
Ingredients/Components
- cinnamon - 1/2 tsp
- half and half - 1/3 c
- granulated sugar - 1/2 c
- butter or margarine - 1/4 c
- salt - 1/4 tsp
- coconut - 1/4 c
- brown sugar, firmly packed - 1/4 c
- orange juice - 1/4 c
- drained, crushed pineapple - 2/3 c
- medium sweet potatoes, cooked and mashed - 6 item
How to make hawaiian sweet potatoes:
Combine sweet potatoes, pineapple and orange juice; mix well. Combine half and half, brown sugar and butter; cook over low heat, stirring constantly until butter is melted. Add to potato mixture along with salt and cinnamon; blend thoroughly. Pour into a lightly greased shallow casserole; sprinkle with coconut. Bake at 400° about 10 minutes or until coconut is lightly toasted. Makes 8 to 10 servings.Pecans may be added with marshmallows and coconut on top before baking.
