Ingredients/Components

  • sugar - 1 c
  • pkg - 1 oz
  • salt
  • flour - 2 Tbsp
  • coconut - 1 c
  • oil - 1 Tbsp
  • eggs, beaten - 2 item
  • miniature marshmallows - 1 c
  • lemon juice - 1 Tbsp
  • pineapple juice
  • cans mandarin oranges, drained - 3 oz
  • nuts if desired - 1 item
  • crushed pineapple, drained - 1 (20
  • to 2 cans chunked pineapple, drained - 1 item

How to make hawaiian salad:

Sauce: Mix sugar, flour and 1/2 teaspoon salt. Add pineapple juice and eggs. Cook until thick. Add lemon juice and cool.

Bring 3 quarts of water to a boil with 2 tablespoons of salt and oil. Add pasta and cook until done. Rinse and drain. Cool. Combine egg mix and pasta. Mix lightly but thoroughly. Refrigerate until chilled in airtight container overnight. Add remaining ingredients and mix thoroughly. Refrigerate in airtight container.

Salad may be kept a week or also frozen but may alter the texture. Yields 25 servings.
