Hawaiian chicken kabobs
Ingredients/Components
- ground ginger - 1/2 tsp
- garlic powder - 1/4 tsp
- crushed red pepper - 1/8 tsp
- small whole fresh mushrooms - 8 item
- medium green pepper, cut in squares - 1 item
- can apricots in juice - 1 oz
- boneless, cut in 16 pieces - 2 whole
How to make hawaiian chicken kabobs:
Drain apricots, reserving juice. Quarter apricot halves.Marinade: In shallow dish, combine reserved juice, ginger, garlic and red pepper. Add chicken; toss well. Chill 1 hour or more.
Meanwhile, in small saucepan, in 1 inch boiling water, cook green pepper 1 minute; drain. Remove chicken from marinade, reserving marinade. On each of 4 skewers, arrange chicken, green pepper, mushrooms and apricots. Place on broiler pan. Broil 4 inches from heat for 10 minutes, or until done, turning often and brushing with marinade. Makes 4 servings.
