Hawaiian chicken kabobs



  • ground ginger - 1/2 tsp
  • garlic powder - 1/4 tsp
  • crushed red pepper - 1/8 tsp
  • small whole fresh mushrooms - 8 item
  • medium green pepper, cut in squares - 1 item
  • can apricots in juice - 1 oz
  • boneless, cut in 16 pieces - 2 whole

How to make hawaiian chicken kabobs:

Drain apricots, reserving juice. Quarter apricot halves.

Marinade: In shallow dish, combine reserved juice, ginger, garlic and red pepper. Add chicken; toss well. Chill 1 hour or more.

Meanwhile, in small saucepan, in 1 inch boiling water, cook green pepper 1 minute; drain. Remove chicken from marinade, reserving marinade. On each of 4 skewers, arrange chicken, green pepper, mushrooms and apricots. Place on broiler pan. Broil 4 inches from heat for 10 minutes, or until done, turning often and brushing with marinade. Makes 4 servings.
