Hawaiian carrot cake
Ingredients/Components
- sugar
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- coconut - 1 c
- baking powder - 1 tsp
- raisins - 1/2 c
- grated carrot - 1 c
- Crisco oil - 1 c
- crushed pineapple - 1 c
How to make hawaiian carrot cake:
Mix all dry ingredients in a large bowl. In a large bowl with a mixer, beat eggs, sugar, oil and vanilla. Then add pineapple, carrots, coconut and raisins. Mix with dry ingredients, only until blended. Pour into a 9 x 13-inch pan or a Bundt pan. Bake at 325° for about 60 minutes.This cake freezes well. Sometimes I drizzle a cream cheese frosting over it. "Good Eating."
