Ingredients/Components

  • sugar
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • coconut - 1 c
  • baking powder - 1 tsp
  • raisins - 1/2 c
  • grated carrot - 1 c
  • Crisco oil - 1 c
  • crushed pineapple - 1 c

How to make hawaiian carrot cake:

Mix all dry ingredients in a large bowl. In a large bowl with a mixer, beat eggs, sugar, oil and vanilla. Then add pineapple, carrots, coconut and raisins. Mix with dry ingredients, only until blended. Pour into a 9 x 13-inch pan or a Bundt pan. Bake at 325° for about 60 minutes.

This cake freezes well. Sometimes I drizzle a cream cheese frosting over it. "Good Eating."
