Ingredients/Components
- beef stew, chunked - 2 lb
- quick cooking tapioca - 1/3 c
- basil - 1 tsp
- cumin seed - 1 Tbsp
- salt - 1 tsp
- carrots, sliced - 4 item
- cloves garlic, minced - 4 item
- onions, chopped into eighths - 2 item
- cans tomatoes - 2 oz
- pkg - 1 oz
- small potatoes, quartered - 8 item
- small zucchini, sliced thin - 2 item
How to make harvest stew:
Mix all ingredients, except corn, potatoes and zucchini in greased baking dish with lid. Bake for 2 hours and 30 minutes at 325°; stir occasionally. Add corn and potatoes; bake for 1 1/2 hours. Stir in zucchini. Cover and let stand 10 minutes. Makes 8 servings.Recipe categories: Main dish, Beef, Stew.
