Ingredients/Components

  • beef stew, chunked - 2 lb
  • quick cooking tapioca - 1/3 c
  • basil - 1 tsp
  • cumin seed - 1 Tbsp
  • salt - 1 tsp
  • carrots, sliced - 4 item
  • cloves garlic, minced - 4 item
  • onions, chopped into eighths - 2 item
  • cans tomatoes - 2 oz
  • pkg - 1 oz
  • small potatoes, quartered - 8 item
  • small zucchini, sliced thin - 2 item

How to make harvest stew:

Mix all ingredients, except corn, potatoes and zucchini in greased baking dish with lid. Bake for 2 hours and 30 minutes at 325°; stir occasionally. Add corn and potatoes; bake for 1 1/2 hours. Stir in zucchini. Cover and let stand 10 minutes. Makes 8 servings.
