  • cornstarch - 2 tsp
  • salt - 1/2 tsp
  • pepper - 1/8 tsp
  • hot beet juice - 1/4 c
  • vinegar - 1/4 c
  • can sliced beets, drained - 1 lb

How to make harvard beets:

In a 2-quart saucepan, combine sugar, cornstarch, salt and pepper. Add beet juice and vinegar. Simmer, uncovered, over low heat; stir until clear and thickened, about 5 minutes. Add beets and heat until hot. Yield: 4 servings.
