Ingredients/Components
- salt - 1/2 tsp
- cornstarch - 1 Tbsp
- margarine - 2 Tbsp
- cider vinegar - 1/4 c
- ground cinnamon - 3/4 tsp
- dry mustard - 1/2 tsp
- orange juice - 1/4 c
- ground allspice - 1/2 tsp
- brown Sugar Twin - 1 Tbsp
- pineapple tidbits - 1 c
- can pineapple tidbits in natural juice - 1 oz
- sweet potatoes, cooked 3 c
- baked ham, cut into 8 slices - 1 lb
How to make ham casserole:
Sauce: reserved pineapple juice plus water to make 1/2 c.1/4 c. orange juice1/4 c. cider vinegar1/4 c. brown Sugar Twin1 Tbsp. cornstarch3/4 tsp. ground cinnamon1/2 tsp. dry mustard1/4 tsp. ground allspice1 c. pineapple tidbits In a large bowl, combine mashed sweet potatoes, 1 cup of drained pineapple, melted margarine, brown Sugar Twin, allspice, mustard and salt. Mix well and spoon into a 1 1/2-quart baking dish. Layer ham on top of potato mixture.For sauce, in a medium saucepan, combine all sauce ingredients except pineapple. Bring to a boil over medium heat. Boil 1 minute, until sauce thickens. Stir continually. Remove from heat and add pineapple. Spoon sauce over ham slices. Reserve remaining sauce. Bake casserole at 350° for 30 to 40 minutes, until heated. Serve with remaining sauce. Makes 8 servings.
