Gumbo
Ingredients/Components
- flour - 1 item
- water - 3 c
- onion, chopped - 1 item
- parsley, chopped
- celery, chopped - 4 Tbsp
- oil or shortening - 1 item
- or 4 green onions, chopped - 3 item
- chicken, fish or seafood - 1 item
How to make gumbo:
Gumbo:3 Tbsp. parsley, chopped onion, chopped3 or 4 green onions, chopped4 Tbsp. celery, chopped3 c. water chicken, fish or seafood For the roux, use an iron skillet or Dutch oven and mix equal parts of oil or shortening and flour in a hot skillet; (I use about 6 tablespoons of each). Brown roux over high heat, stirring constantly until it is dark brown. Set aside.Mix parsley, onion, green onions, celery and water. Bring to a boil and add the roux. Season with salt and pepper to taste. If you are making chicken gumbo, add chicken now. Cook until meat is ready (about 2 hours).
If you are making fish or seafood gumbo, wait until the last 15 minutes of cooking to add meat. Serve over rice.
