• cut fresh okra or 1 box frozen cut okra - 1/2 lb
  • ears fresh corn, cut off cob or 2 boxes frozen kernel - 3 item
  • large onion, diced - 1 item
  • fresh peeled tomatoes or 1 can, drained and chopped - 3 item
  • chicken or other broth - 1 qt
  • raw rice - 1/3 c
  • salt - 1 tsp
  • garlic powder or salt - 1 tsp
  • good pinch red pepper - 1 item

How to make gumbo:

In a skillet sprayed with Pam or salad oil, fry on medium heat the okra, corn, onion and tomatoes. This will fry up juicy. Continue cooking until it cooks down to almost dry. (If you use frozen corn, boil instead of fry.)

In large pot, put chicken or other broth, raw rice, salt, garlic powder or salt and red pepper. Boil for 25 minutes or until rice is cooked. Turn fried vegetables into pot of broth.

Add meat from boiled chicken or 2 chicken breasts or about 1 pound of seafood (shrimp, crab or fillet fish or mix them) or other meat, such as stew meat or leftover turkey. Add a little more broth, water or tomato juice if it is too thick.
