Grilled vegetables



  • salt - 1/2 tsp
  • margarine or butter - 2 Tbsp
  • sliced fresh mushrooms - 2 c
  • ground cumin - 1 tsp
  • medium zucchini, sliced - 1 item
  • black pepper - 1/4 tsp
  • chopped green onion - 1/4 c
  • green bell pepper, cut into strips - 1/2 item
  • finely chopped tomato - 1 c
  • medium squash, sliced - 1 item

How to make grilled vegetables:

Melt margarine or butter in a large heavy skillet with heat-proof handle on grid over medium coals. Add zucchini, squash, mushrooms, bell pepper, cumin, salt and black pepper. Cook 4 to 5 minutes or until vegetables are crisp-tender, stirring occasionally. Add tomato and green onion. Continue to cook and stir for 1 minute. Makes 6 servings.
