Ingredients/Components
- sugar - 5 lb
- water - 2 gal
- vinegar - 3 pt
- pickling spice - 2 Tbsp
- lime - 3 c
- green tomatoes, sliced - 7 lb
How to make green tomato pickles:
Soak tomatoes in lime water 24 hours; drain and wash carefully through 3 or 4 waters. Soak in ice water 4 hours. Drain well. Combine vinegar, spices and sugar. Heat and pour over tomatoes and let set for 3 or 4 hours. Add tomatoes and simmer for 35 minutes. Put in clean, hot jars and seal.Recipe categories: American, Condiments, etc., Vegetables.
