Green tomato pickles
Ingredients/Components
- salt - 3 Tbsp
- brown sugar - 2/3 c
- vinegar - 2 c
- white sugar - 1 c
- celery seed - 1/2 tsp
- mustard seed - 3 Tbsp
- turmeric - 1 tsp
- sliced onions - 3 c
- sliced green tomatoes about 18 medium - 2 qt
- large red peppers, chopped - 2 item
How to make green tomato pickles:
Mix tomatoes and salt. Let stand 12 hours. Drain. Heat vinegar, sugars and spices to boiling. Pour in 4-quart saucepan. Add sliced onions to hot vinegar; mix and boil gently 5 minutes. Add tomatoes and peppers. Bring slowly to boiling and simmer 5 minutes. Stir occasionally. Makes 9 half pints.Recipe categories: American, Condiments, etc., Vegetables.
