Ingredients/Components
- Velveeta cheese - 1/2 lb
- chopped onion - 1 c
- can cream of chicken soup - 1 item
- ground beef - 1 lb
- salt and pepper - 1 item
- small can evaporated milk - 1 item
- small jar pimentos - 1 item
- green chilies, chopped - 1 c
- tortillas - 1 doz
- grated Longhorn cheese - 1/2 lb
How to make green enchiladas:
Combine first 5 ingredients and melt in double boiler to make a sauce. Salt and pepper meat. Cook meat until brown; add onion when meat is done. Add cheese and melt. Remove from heat. Dip tortillas in hot oil about 10 seconds. Drain. Roll meat in tortillas; place in baking dish and cover with cheese sauce. Bake.Recipe categories: Lunch/snacks, Casseroles, One Dish meal.
