Ingredients/Components

  • Velveeta cheese - 1/2 lb
  • chopped onion - 1 c
  • can cream of chicken soup - 1 item
  • ground beef - 1 lb
  • salt and pepper - 1 item
  • small can evaporated milk - 1 item
  • small jar pimentos - 1 item
  • green chilies, chopped - 1 c
  • tortillas - 1 doz
  • grated Longhorn cheese - 1/2 lb

How to make green enchiladas:

Combine first 5 ingredients and melt in double boiler to make a sauce. Salt and pepper meat. Cook meat until brown; add onion when meat is done. Add cheese and melt. Remove from heat. Dip tortillas in hot oil about 10 seconds. Drain. Roll meat in tortillas; place in baking dish and cover with cheese sauce. Bake.
