Green chili enchilada casserole
Ingredients/Components
- ground beef - 1 lb
- small chopped onion - 1 item
- can cream of mushroom soup - 1 item
- can cream of chicken soup - 1 item
- can mild enchilada sauce - 1 item
- small can chopped green chilies - 1 item
- small can chopped ripe olives - 1 item
- small jar pimentos - 1 item
- big bag tortilla chips - 1 item
- grated cheese - 1 lb
- salt and pepper - 1 item
How to make green chili enchilada casserole:
Brown ground beef and onion together; salt and pepper to taste. In 6-quart pot add soups and water as directed on can. Add everything else except tortilla chips and cheese. Bring to a boil. Use a large deep casserole dish. Add a layer of chips, a layer of drained meat mixture, a layer of soup mixture and a layer of cheese and repeat until all used.
