Green chili cornbread
Ingredients/Components
- baking powder - 4 tsp
- vegetable oil - 1/3 c
- all-purpose flour
- low-fat milk - 2 c
- yellow corn meal
- can whole corn, drained - 1 oz
- each baking soda and salt - 1 tsp
- small can green chilies, drained - 1 item
- whites from 4 large eggs
How to make green chili cornbread:
Spray large cast-iron skillet with Pam. Heat oven to 400°. Mix flour, corn meal, baking powder, baking soda and salt in large bowl. Stir in milk, oil and egg whites until fairly smooth. Fold in chilies and corn. Spread in skillet. Bake 20 minutes or until golden brown and pick inserted in center comes out clean.
